So, I am hosting a few family members (2 adults and 1 teenager). As a single empty nester, I’ve only had to feed me, and trust … I am NOT a cheap date.
But now, I’m faced with feeding 3 hungry adults, 1 ravenous teenager, and I am not treating every out to dinner. 😡
BTW, did I mention that they are Vegetarians? Luckily I’ve been on my clean eating phase, so that didn’t bother me.
Call it stubborn or frugal, but if I’m paying, we’re eating on a budget. So, I figured out how to fix a meal fit for an entire family for around $10.

Chunky Cabbage Soup
- 2 tbsp Olive Oil
- 2 tbsp Garlic (Minced)
- 1 Yellow Onion (Diced)
- 1/2 Cabbage (Chopped)
- 2 Yukon or Baking Potatoes (Diced)
- 10 oz Canned Tomatoes and Green Peppers (Diced)
- 3 Carrots (Diced)
- 3 Stalks Celery (Diced)
- 1 Can Garbanzo Beans (Chick Peas)
- 4 Cups Vegetable Broth
- 2 tsps Himalayan Salt
- 2 tsps Pepper
Saute onions and garlic in olive oil until onions are almost translucent.
Add chopped mushrooms and saute until slightly browned.
Add chopped cabbage and mix with onions, mushrooms and garlic.
Add vegetable broth, tomatoes w green peppers, diced potatoes, carrots, celery and drained garbanzo beans.
Stir all ingredients.
Place soup on medium high until boiling.
When it comes to a boil, turn heat down to medium low until veggies are tender to your liking.
Add salt and pepper to taste.
If you want to add a kick, add red pepper flakes while it simmers. Be careful...don't add too much. 😉
To make the soup more hearty, add brown rice, quinoa or noodles.
Although prices may vary based on the store and location, these ingredients where cheap and produced a fabulous meal.
