I love Chinese Food, especially General Tso’s Chicken. However, since I’ve been on my clean eating tip, I am trying to stay away from meat. Yeah … but that doesn’t stop my cravings.
So, I figured … “Why can’t I have both?” My favorite dish with no meat!
Guess what? It worked and it was DEEEELISH!!! If you love General Tso’s Chicken (like me), but want to save a couple bucks by not eating out and add a vegetarian twist to it, try my recipe below. Let me know what you think.
General Tso's Chicken(LESS) Over Rice With Tempura Califlower
- 1 bag Uncle Ben's Ready Rice (Original)
- 1 bag Morning Star Farms Veggie Chik'n Nuggets
- 2 Cups Large Broccoli Florets (Fresh)
- 2 Cups Califlower Florets (Fresh)
- 1 Cup Tempura Batter Mix
- 3/4 Cups Cold Water
- 1 Cup Ty Ling Naturals General Tso's Sauce
- 1/4 Cup Warm Water
- 1 tbsp Garlic Powder
- Himalayan Salt
- Cracked Pepper
- 1 tsp Sesame Seeds
- 4 Cups Vegetable or Coconut Oil
Steam Broccoli and Califlower until slightly tender.
Separate Broccoli and Califlower.
Heat cooking oil.
Mix Tempura Batter Mix, garlic powder, pinch of salt and Cold Water until batter has no lumps.
Stir in Califlower in batter until completely covered.
Placed battered Califlower in hot cooking oil for 2 to 3 minutes or until slightly browned.
Place Tempura Califlower on plate with paper towel to remove excess oil and set aside.
General Tso's Chicken(LESS)
Place Morning Star Farms Chick'n Nuggets in cooking oil for 3-4 minutes or until nuggets are browned and crispy. (don't over fry them)
Put General Tso's Sauce in a bowl and stir in warm water to loosen the sauce.
Add fried Chick'n Nuggets to a frying pan and add sauce.
Mix sauce and nuggets until nuggets are completely covered with the sauce on medium low heat.
Remove from heat when nuggets and sauce are warm.
Microwave Uncle Ben's Rice for 90 seconds. (Follow instructions on bag).
Put it all together!
Put rice on serving plate or big bowl. Stir with fork to loosen rice.
Add steamed broccoli inside the perimeter of the plate or bowl.
Add the chick'n nuggets and sauce in the center of the plate or bowl on top of the rice.
Sprinkle sesame seeds over the chick'n and sauce.
Put the excess sauce in a small bowl to use as dipping sauce for Tempura Califlower.
Place Tempura Califlower on a serving plate or bowl.
